Description
A comforting one-pot meal featuring tender chicken thighs simmered in a sweet and savory honey BBQ sauce with rice.
Ingredients
- 2 pounds of chicken thighs, boneless and skinless
- 1 cup of rice (white or brown)
- 2 cups of chicken broth
- ½ cup of honey BBQ sauce
- 1 tablespoon of olive oil
- 1 onion, diced
- 1 bell pepper, chopped
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and chopped bell pepper; sauté until softened.
- Season the chicken thighs with salt and pepper, then add to the skillet. Sear on both sides until golden brown.
- Pour in the honey BBQ sauce and chicken broth, stirring well to combine. Bring to a gentle boil.
- Add the rice, cover the skillet, and reduce heat to low. Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
- Fluff the rice with a fork, garnish with chopped green onions if desired, and serve hot.
Notes
For extra flavor, marinate the chicken in BBQ sauce for a couple of hours before cooking. Using brown rice enhances the nutritional value.
