Description

A comforting one-pot meal featuring tender chicken thighs simmered in a sweet and savory honey BBQ sauce with rice.


Ingredients

  • 2 pounds of chicken thighs, boneless and skinless
  • 1 cup of rice (white or brown)
  • 2 cups of chicken broth
  • ½ cup of honey BBQ sauce
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and chopped bell pepper; sauté until softened.
  2. Season the chicken thighs with salt and pepper, then add to the skillet. Sear on both sides until golden brown.
  3. Pour in the honey BBQ sauce and chicken broth, stirring well to combine. Bring to a gentle boil.
  4. Add the rice, cover the skillet, and reduce heat to low. Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
  5. Fluff the rice with a fork, garnish with chopped green onions if desired, and serve hot.

Notes

For extra flavor, marinate the chicken in BBQ sauce for a couple of hours before cooking. Using brown rice enhances the nutritional value.
