Ingredients
- 1 pound chicken breasts, diced
- 1 cup orzo pasta
- 2 cups chicken broth (low-sodium preferred)
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning (adjust to taste)
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add diced chicken and season with salt, pepper, and Cajun seasoning. Sauté until browned and cooked through.
- Stir in the orzo and chicken broth, bringing the mixture to a boil.
- Reduce the heat to low, cover, and let simmer until the orzo is tender and most of the liquid is absorbed, about 10-12 minutes.
- Pour in the heavy cream and Parmesan cheese, stirring until well combined and creamy. Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
To keep leftovers fresh, store them in an airtight container in the fridge for up to 3 days. Reheat with a splash of chicken broth or cream to restore creaminess.
