Description

A hearty and comforting potato soup that’s quick to prepare and perfect for busy weeknights or family gatherings.


Ingredients

  • 4 cups vegetable broth
  • 4 medium potatoes, diced
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup dairy-free cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish


Instructions

  1. In a large pot, drizzle a little oil over medium heat. Sauté the onions, carrots, and celery until soft.
  2. Toss in the sliced mushrooms and cook for an additional few minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Add in the diced potatoes along with the garlic powder. Lower the heat and let it simmer until the potatoes become tender, about 20 minutes.
  5. Stir in the dairy-free cheese and mix until melted and cohesive.
  6. Season with salt and pepper to fit your taste.
  7. Serve it up hot, garnished with fresh herbs for that extra touch.

Notes
