Ingredients
- 4 cups vegetable broth
- 4 medium potatoes, diced
- 1 cup mushrooms, sliced
- 1 medium onion, chopped
- 1 cup carrots, diced
- 1 cup celery, diced

- 1 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- In a large pot, drizzle a little oil over medium heat. Sauté the onions, carrots, and celery until soft.
- Toss in the sliced mushrooms and cook for an additional few minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add in the diced potatoes along with the garlic powder. Lower the heat and let it simmer until the potatoes become tender, about 20 minutes.
- Stir in the dairy-free cheese and mix until melted and cohesive.
- Season with salt and pepper to fit your taste.
