  • Bone-in, skin-on chicken thighs
  • Olive oil or melted butter
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • Optional: Fresh herbs (thyme or rosemary)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry using paper towels.
  3. In a bowl, combine olive oil (or butter) with salt, pepper, garlic powder, and paprika.
  4. Rub the mixture onto the chicken thighs, ensuring an even coat.
  5. Place the thighs on a lined baking sheet, skin-side up, ensuring they’re spaced apart.
  6. Roast in the oven for about 40-45 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes before serving.

Notes

For extra crispy skin, ensure the chicken is dry before seasoning. Consider using a wire rack on the baking sheet.
