Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- Salt and pepper, to taste
- Green onions, chopped (for garnish)
- Sour cream (for serving)
Instructions
- Heat a splash of oil in a large pot. Add the chopped onion and sauté until it softens, about 3-4 minutes.
- Toss in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 20 minutes.
- Blend the mixture until smooth, then return it to the pot.
- Stir in the heavy cream, cheddar cheese, and crumbled bacon until well combined.
- Season generously with salt and pepper to taste.
- Serve hot, garnished with fresh green onions and a dollop of sour cream.
Notes
For a healthier version, consider replacing heavy cream with half-and-half or low-fat milk. This soup can also be made vegetarian by using vegetable broth and omitting bacon.
