Description

A comforting and hearty Loaded Baked Potato Soup, perfect for chilly nights, packed with flavors and creamy texture.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)
  • Sour cream (for serving)


Instructions

  1. Heat a splash of oil in a large pot. Add the chopped onion and sauté until it softens, about 3-4 minutes.
  2. Toss in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 20 minutes.
  3. Blend the mixture until smooth, then return it to the pot.
  4. Stir in the heavy cream, cheddar cheese, and crumbled bacon until well combined.
  5. Season generously with salt and pepper to taste.
  6. Serve hot, garnished with fresh green onions and a dollop of sour cream.

Notes

For a healthier version, consider replacing heavy cream with half-and-half or low-fat milk. This soup can also be made vegetarian by using vegetable broth and omitting bacon.
