Description

Delicious and nutritious bite-sized snacks made with peanut butter, oats, and chocolate chips, perfect for pre- or post-workout fuel.


Ingredients

  • 1.5 cups old-fashioned oats
  • 1 cup creamy peanut butter
  • 1/2 cup mini chocolate chips
  • 1/2 cup ground flaxseed
  • 4 tablespoons honey (or maple syrup)


Instructions

  1. In a large mixing bowl, combine the oats, peanut butter, mini chocolate chips, flaxseed, and honey. Stir until all ingredients are well mixed together.
  2. Chill the mixture in the refrigerator for about 10-15 minutes to help them set.
  3. Once chilled, roll the mixture into bite-sized balls—aim for about 18 little bites of goodness!
  4. Store your delicious creations in an airtight container in the refrigerator for up to two weeks.

Notes

For a fun twist, drizzle dark chocolate on top before they set. You can also freeze these energy balls for up to three months.
