Delicious and nutritious bite-sized snacks made with peanut butter, oats, and chocolate chips, perfect for pre- or post-workout fuel.
Ingredients
- 1.5 cups old-fashioned oats
- 1 cup creamy peanut butter
- 1/2 cup mini chocolate chips
- 1/2 cup ground flaxseed
- 4 tablespoons honey (or maple syrup)
Instructions
- In a large mixing bowl, combine the oats, peanut butter, mini chocolate chips, flaxseed, and honey. Stir until all ingredients are well mixed together.
- Chill the mixture in the refrigerator for about 10-15 minutes to help them set.
- Once chilled, roll the mixture into bite-sized balls—aim for about 18 little bites of goodness!
- Store your delicious creations in an airtight container in the refrigerator for up to two weeks.
Notes
For a fun twist, drizzle dark chocolate on top before they set. You can also freeze these energy balls for up to three months.
