Ingredients
- 6 large eggs (free-range recommended)
- 1 cup milk
- 1 cup shredded cheese (cheddar works great)
- 2 cups fresh spinach (or your favorite greens)
- 1 cup diced vegetables (bell peppers, onions, or mushrooms)
- 1 cup cooked ground beef (seasoned)
- Salt and pepper to taste
- Optional herbs for garnish (like parsley or chives)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the eggs and milk until blended. Season with salt and pepper.
- In a greased baking dish, layer the cooked ground beef, then add the diced vegetables and spinach.
- Pour the egg mixture over the layers, ensuring even coverage.
- Sprinkle the shredded cheese on top.
- Bake for 35-45 minutes, or until the edges are set and the center is slightly jiggly.
- Allow it to cool for a few minutes before slicing into squares.
