Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 4 cloves garlic (minced)
- 1 tsp cumin
- 2 tbsp soy sauce
- Juice of 2 limes
- Olive oil
- Salt and pepper to taste
- 1 ripe avocado
- 1 cup fresh cilantro
- 1/2 cup mayonnaise
- Juice of 1 lime
- 1 garlic clove
- 1-2 jalapeños (adjust for heat)
- Salt to taste
Instructions
- In a large bowl, combine minced garlic, cumin, soy sauce, lime juice, olive oil, salt, and pepper.
- Add chicken thighs and coat thoroughly; marinate for at least 30 minutes or overnight for maximum flavor.
- Preheat your grill to medium-high heat.
- Grill chicken thighs for about 6-8 minutes per side, until the internal temperature reaches 165°F (75°C).
- While the chicken grills, combine avocado, cilantro, mayonnaise, lime juice, minced garlic, jalapeños, and salt in a blender; blend until smooth and creamy.
- Once cooked, let the chicken rest for a few minutes before slicing.
- Serve the chicken with a generous drizzle of creamy green sauce on top.
Notes
