Description

This creamy pesto chicken pasta combines tender chicken with vibrant basil pesto and perfectly cooked pasta for a comforting and indulgent meal.


Ingredients

  • Any pasta shape (penne, farfalle, or spaghetti)
  • 2 boneless, skinless chicken breasts
  • 1/2 cup basil pesto (homemade or store-bought)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Cook the pasta: In a large pot, bring water to a boil and salt it generously. Cook your pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain and set aside.
  2. Cook the chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and let rest before slicing.
  3. Combine: In the same skillet, add cooked pasta and pesto. Toss everything together, adding a bit of reserved pasta water to help the sauce adhere, if necessary.
  4. Serve: Top with sliced chicken and sprinkle Parmesan cheese if desired.

Notes

For added crunch, consider sprinkling toasted pine nuts on top. This dish can be paired with a light salad or garlic bread for extra comfort.
