Ingredients
- Any pasta shape (penne, farfalle, or spaghetti)
- 2 boneless, skinless chicken breasts
- 1/2 cup basil pesto (homemade or store-bought)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook the pasta: In a large pot, bring water to a boil and salt it generously. Cook your pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain and set aside.
- Cook the chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and let rest before slicing.
- Combine: In the same skillet, add cooked pasta and pesto. Toss everything together, adding a bit of reserved pasta water to help the sauce adhere, if necessary.
- Serve: Top with sliced chicken and sprinkle Parmesan cheese if desired.
