Description

A hearty, low-carb casserole featuring tender beef, vibrant vegetables, and melty cheese – perfect for family dinners or gatherings.


Ingredients

  • 1 pound of ground beef
  • 1 bell pepper, sliced (any color)
  • 1 medium onion, sliced
  • 2 cups of mushrooms, sliced
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add the sliced onions, peppers, and mushrooms, sautéing until they’re softened, about 5-7 minutes.
  3. Push the vegetables to one side and add the ground beef to the pan. Season with garlic powder, salt, and pepper. Cook until well browned, about 8-10 minutes.
  4. Transfer the beef and vegetable mixture into a greased baking dish. Top evenly with shredded mozzarella cheese.
  5. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.

Notes

For added spice, consider adding hot peppers or seasoning blends. This dish pairs well with a side salad or steamed veggies.
