Description

A delightful snack combining tangy pickled eggs and savory beef sausage, perfect for gatherings or potlucks.

Ingredients

  • 6 large eggs
  • 1/2 cup vinegar (white or apple cider)
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 cup diced beef sausage (fully cooked)
  • 1 medium onion, sliced
  • Spices (e.g., mustard seeds, black peppercorns)

Instructions

  1. Boil the eggs in a pot for 10-12 minutes until hard-boiled. Cool them in an ice bath and peel.
  2. In a saucepan, combine vinegar, water, sugar, and salt. Heat until dissolved, then let it cool slightly.
  3. In a clean jar, layer the beef sausage, sliced onions, and boiled eggs.
  4. Pour the cooled pickling liquid over the layers in the jar, ensuring everything is submerged.
  5. Close the jar tightly and refrigerate for at least 24 hours to develop the flavors. For best results, let it sit for 3-5 days.

Notes

Store pickled eggs and sausage in an airtight container in the refrigerator. They can last for 2-3 weeks, with flavors improving over time.
