Ingredients
- 6 large eggs
- 1/2 cup vinegar (white or apple cider)

- 1 tablespoon salt
- 1 cup diced beef sausage (fully cooked)
- 1 medium onion, sliced

Instructions
- Boil the eggs in a pot for 10-12 minutes until hard-boiled. Cool them in an ice bath and peel.
- In a saucepan, combine vinegar, water, sugar, and salt. Heat until dissolved, then let it cool slightly.
- In a clean jar, layer the beef sausage, sliced onions, and boiled eggs.
- Pour the cooled pickling liquid over the layers in the jar, ensuring everything is submerged.
- Close the jar tightly and refrigerate for at least 24 hours to develop the flavors. For best results, let it sit for 3-5 days.
