Ingredients
- 1.5 pounds chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks, fresh or canned
- 1 bell pepper, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cups cooked rice
- 2 tablespoons olive oil
- Green onions for garnish (optional)
Instructions
- Marinate the chicken in soy sauce, honey, and minced garlic. Let it sit for at least 10 minutes while you prep the other ingredients.
- Heat olive oil over medium-high heat in a large skillet. Add the chopped onion and bell peppers, sautéing until they are soft.
- Add the marinated chicken to the pan, cooking until it’s browned on the outside and cooked through, about 8-10 minutes.
- Stir in the pineapple chunks and cook for an additional 5 minutes, allowing the flavors to meld together.
- Serve the chicken mixture over cooked rice, garnished with green onions if desired.
Notes
For a fun presentation, serve in a hollowed-out pineapple shell. Adjust sweetness by adding more or less honey based on your taste.
