Description

A delightful blend of juicy chicken and sweet pineapple, served over fluffy rice, bringing the tropics to your dining room.


Ingredients

  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks, fresh or canned
  • 1 bell pepper, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cups cooked rice
  • 2 tablespoons olive oil
  • Green onions for garnish (optional)


Instructions

  1. Marinate the chicken in soy sauce, honey, and minced garlic. Let it sit for at least 10 minutes while you prep the other ingredients.
  2. Heat olive oil over medium-high heat in a large skillet. Add the chopped onion and bell peppers, sautéing until they are soft.
  3. Add the marinated chicken to the pan, cooking until it’s browned on the outside and cooked through, about 8-10 minutes.
  4. Stir in the pineapple chunks and cook for an additional 5 minutes, allowing the flavors to meld together.
  5. Serve the chicken mixture over cooked rice, garnished with green onions if desired.

Notes

For a fun presentation, serve in a hollowed-out pineapple shell. Adjust sweetness by adding more or less honey based on your taste.
