Ingredients
- 1 pound boneless, skinless chicken thighs or breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- Corn or flour tortillas
- Fresh cilantro, chopped (optional)
- Red onion, diced
- Lime wedges for serving
Instructions
- Begin by preparing the chicken. In a large bowl, combine olive oil, chili powder, cumin, salt, and pepper. Add your chicken and toss to coat evenly. Let it marinate for at least 15 minutes.
- While the chicken marinates, grill or sauté the diced pineapple in a pan over medium heat until caramelized, about 3-4 minutes. Set aside once done.
- Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side until fully cooked, reaching an internal temperature of 165°F.
- Allow the chicken to rest for a few minutes, then slice it into strips.
- Warm the tortillas either in a pan or on the grill until pliable.
- Assemble the tacos by adding chicken, grilled pineapple, red onion, and cilantro to each tortilla.
- Serve with fresh lime wedges on the side for that extra zest.
