Description

Vibrant tacos filled with grilled chicken and sweet pineapple for a refreshing tropical flavor.


Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Corn or flour tortillas
  • Fresh cilantro, chopped (optional)
  • Red onion, diced
  • Lime wedges for serving


Instructions

  1. Begin by preparing the chicken. In a large bowl, combine olive oil, chili powder, cumin, salt, and pepper. Add your chicken and toss to coat evenly. Let it marinate for at least 15 minutes.
  2. While the chicken marinates, grill or sauté the diced pineapple in a pan over medium heat until caramelized, about 3-4 minutes. Set aside once done.
  3. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side until fully cooked, reaching an internal temperature of 165°F.
  4. Allow the chicken to rest for a few minutes, then slice it into strips.
  5. Warm the tortillas either in a pan or on the grill until pliable.
  6. Assemble the tacos by adding chicken, grilled pineapple, red onion, and cilantro to each tortilla.
  7. Serve with fresh lime wedges on the side for that extra zest.
