Description

Delicious tacos featuring juicy chicken and sweet pineapple for a tropical twist.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup fresh pineapple, chopped
  • 1 small red onion, finely chopped
  • 1 bell pepper, diced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 8 small tortillas (corn or flour)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. In a bowl, combine chicken, pineapple, onion, bell pepper, garlic powder, cumin, salt, and pepper. Mix well and let marinate for about 15 minutes.
  2. Heat a skillet over medium heat. Add the marinated chicken mixture and cook for about 10-12 minutes or until the chicken is cooked through and the vegetables are tender.
  3. Warm the tortillas in a separate pan until pliable.
  4. Assemble the tacos by placing the chicken mixture in the center of each tortilla.
  5. Garnish with fresh cilantro and serve with lime wedges.
