Ingredients
- 1 lb chicken breast, diced
- 1 cup fresh pineapple, chopped
- 1 small red onion, finely chopped
- 1 bell pepper, diced
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper, to taste
- 8 small tortillas (corn or flour)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a bowl, combine chicken, pineapple, onion, bell pepper, garlic powder, cumin, salt, and pepper. Mix well and let marinate for about 15 minutes.
- Heat a skillet over medium heat. Add the marinated chicken mixture and cook for about 10-12 minutes or until the chicken is cooked through and the vegetables are tender.
- Warm the tortillas in a separate pan until pliable.
- Assemble the tacos by placing the chicken mixture in the center of each tortilla.
- Garnish with fresh cilantro and serve with lime wedges.
