Description

A creamy and comforting Potato Cauliflower Soup that is perfect for chilly evenings and easy to prepare for any occasion.


Ingredients

  • 2 cups cauliflower florets
  • 2 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or a dairy-free alternative)
  • 1/2 cup grated Parmesan cheese (optional for a vegan version)
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, stirring until soft and fragrant.
  3. Combine diced potatoes and cauliflower florets, sautéing briefly.
  4. Pour in the vegetable broth, bring to a boil, then reduce heat and let simmer for about 15-20 minutes until the vegetables are tender.
  5. Use an immersion blender to puree the soup until smooth and creamy.
  6. Stir in the milk and Parmesan cheese, heating through but avoiding a boil.
  7. Adjust seasoning with salt and pepper to taste before serving.
