Description

Delicious and nutritious pumpkin protein balls that provide a perfect blend of flavors and energy for any occasion.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup nut butter (like almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1/2 cup protein powder (your choice of flavor)
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup chocolate chips or nuts (optional)


Instructions

  1. In a large mixing bowl, blend together the pumpkin puree, nut butter, and sweetener until smooth.
  2. Incorporate the rolled oats, protein powder, and pumpkin pie spice; mix until fully combined.
  3. If you’re feeling adventurous, fold in chocolate chips or nuts for an extra crunch!
  4. With clean hands, roll the mixture into 1-inch balls.
  5. Arrange the balls on a baking sheet and refrigerate for at least 30 minutes to set.
  6. Store in an airtight container in the fridge for up to a week, or freeze them for longer storage.

Notes

For a nut-free option, use sunflower seed butter. Substitute sugar with sugar-free syrup if you’re watching your sugar intake.
