Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups pretzels, crushed
- 1 cup breadcrumbs (panko works great!)
- 1/2 cup flour
- 2 eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup Dijon mustard
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow dish, combine the crushed pretzels and breadcrumbs.
- In a separate bowl, whisk the eggs with the milk until smooth.
- Season the chicken breasts with salt and pepper. Dredge each piece in flour, then dip it into the egg mixture, followed by the pretzel-breadcrumb mixture.
- Arrange the coated chicken on a baking sheet lined with parchment paper. Lightly spray them with olive oil.
- Bake for 20-25 minutes or until fully cooked and golden brown.
- While baking, melt cheddar cheese and Dijon mustard together in a small saucepan over low heat, stirring until smooth.
- Serve the chicken hot, drizzled with the cheese-mustard sauce.
Notes
For a gluten-free option, swap pretzels and breadcrumbs for gluten-free varieties. Consider serving with mashed potatoes, steamed vegetables, or a fresh salad.
