A delicious and nutritious no-bake snack featuring the cozy flavors of fall with a protein boost.


Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup pumpkin puree
  • 1/2 cup almond butter
  • 1 scoop vanilla protein powder
  • 1/4 cup chocolate chips
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (optional)


Instructions

  1. In a large mixing bowl, combine the old-fashioned oats, pumpkin puree, almond butter, and vanilla protein powder.
  2. Stir in the chocolate chips along with the cinnamon, nutmeg, and salt.
  3. If you like it a little sweeter, drizzle in the maple syrup.
  4. Mix everything until it’s well combined.
  5. Using your hands, shape the mixture into small balls, about 1 inch in diameter.
  6. Arrange the balls on a baking sheet lined with parchment paper.
  7. Refrigerate for approximately 30 minutes to let them firm up.
