Ingredients
- 1 cup dried black-eyed peas
- 4 slices of bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Soak the black-eyed peas overnight in water. Drain before using.
- Cook the bacon in a medium pot over medium heat until crispy.
- Add the diced onion and minced garlic, stirring until softened.
- Toss in the soaked black-eyed peas and pour in the chicken broth.
- Bring to a boil, then reduce heat and simmer.
- Simmer for about an hour, or until peas are tender.
- Season with salt and pepper to taste and serve warm.
Notes
Feel free to substitute turkey bacon for a healthier option or vegetable broth to make it vegetarian-friendly.
