Description

A comforting dish of black-eyed peas cooked with crispy bacon, perfect for family gatherings and New Year celebrations.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • Salt and pepper to taste


Instructions

  1. Soak the black-eyed peas overnight in water. Drain before using.
  2. Cook the bacon in a medium pot over medium heat until crispy.
  3. Add the diced onion and minced garlic, stirring until softened.
  4. Toss in the soaked black-eyed peas and pour in the chicken broth.
  5. Bring to a boil, then reduce heat and simmer.
  6. Simmer for about an hour, or until peas are tender.
  7. Season with salt and pepper to taste and serve warm.

Notes

Feel free to substitute turkey bacon for a healthier option or vegetable broth to make it vegetarian-friendly.
