Description

A comforting and quick dish made with black-eyed peas, perfect for weeknight dinners and special occasions alike.


Ingredients

  • 1 pound black-eyed peas (dried)
  • 4 cups vegetable broth or water
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: cooked greens (like kale or collard greens) for serving


Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In the Instant Pot, combine the black-eyed peas, vegetable broth, diced onion, minced garlic, smoked paprika, cumin, salt, and pepper.
  3. Close the lid securely and set the pot to manual high pressure for 15 minutes.
  4. Once the cooking cycle completes, allow for a natural release of pressure for about 10 minutes, and then carefully perform a quick release.
  5. If desired, serve the black-eyed peas over a bed of cooked greens.

Notes

Soaking isn’t necessary with the Instant Pot. For additional flavor, consider adding diced tomatoes or a splash of hot sauce.
