A comforting and quick dish made with black-eyed peas, perfect for weeknight dinners and special occasions alike.
Ingredients
- 1 pound black-eyed peas (dried)
- 4 cups vegetable broth or water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional: cooked greens (like kale or collard greens) for serving
Instructions
- Rinse the black-eyed peas under cold water.
- In the Instant Pot, combine the black-eyed peas, vegetable broth, diced onion, minced garlic, smoked paprika, cumin, salt, and pepper.
- Close the lid securely and set the pot to manual high pressure for 15 minutes.
- Once the cooking cycle completes, allow for a natural release of pressure for about 10 minutes, and then carefully perform a quick release.
- If desired, serve the black-eyed peas over a bed of cooked greens.
Notes
Soaking isn’t necessary with the Instant Pot. For additional flavor, consider adding diced tomatoes or a splash of hot sauce.
