Description

A warm and comforting baked oatmeal with raspberry and chocolate chips, perfect for breakfast and meal prep.


Ingredients

  • 2 cups old-fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups almond milk (or preferred milk)
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the oats, baking powder, and salt.
  3. In another bowl, whisk together milk, maple syrup, eggs, and vanilla.
  4. Combine the wet and dry mixtures, then gently fold in the raspberries and chocolate chips.
  5. Pour the mixture into the baking dish and spread evenly.
  6. Bake for 25-30 minutes, or until golden brown and set in the center.
  7. Allow to cool slightly before slicing.

Notes

Serve warm with additional maple syrup or yogurt. Can be enjoyed cold or reheated as a snack. Store leftovers in an airtight container for up to five days.
