Description
A warm and comforting baked oatmeal with raspberry and chocolate chips, perfect for breakfast and meal prep.
Ingredients
- 2 cups old-fashioned oats
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups almond milk (or preferred milk)
- 1/4 cup maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh raspberries
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix the oats, baking powder, and salt.
- In another bowl, whisk together milk, maple syrup, eggs, and vanilla.
- Combine the wet and dry mixtures, then gently fold in the raspberries and chocolate chips.
- Pour the mixture into the baking dish and spread evenly.
- Bake for 25-30 minutes, or until golden brown and set in the center.
- Allow to cool slightly before slicing.
Notes
Serve warm with additional maple syrup or yogurt. Can be enjoyed cold or reheated as a snack. Store leftovers in an airtight container for up to five days.
