Description

A heartwarming and flavorful Red Lentil Chicken Soup, perfect for busy weeknights or cozy family gatherings.


Ingredients

  • 1 cup red lentils
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion, carrots, and celery until softened, about 5 minutes.
  3. Add minced garlic, cumin, and turmeric; cook for another minute.
  4. Stir in the diced chicken and cook until no longer pink, about 5-7 minutes.
  5. Add red lentils and chicken broth; bring to a boil.
  6. Reduce heat and let it simmer for 20 minutes, until the lentils are tender.
  7. Season with salt and pepper to taste.
  8. Serve garnished with fresh parsley.

Notes

For deeper flavor, add a bay leaf while simmering and remove before serving. Experiment with spices for a personalized touch.
