Ingredients
- 1 cup red lentils
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp turmeric
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion, carrots, and celery until softened, about 5 minutes.
- Add minced garlic, cumin, and turmeric; cook for another minute.
- Stir in the diced chicken and cook until no longer pink, about 5-7 minutes.
- Add red lentils and chicken broth; bring to a boil.
- Reduce heat and let it simmer for 20 minutes, until the lentils are tender.
- Season with salt and pepper to taste.
- Serve garnished with fresh parsley.
