Ingredients
- 12 oz pasta of choice (penne or rotini)
- 2 cups fresh corn kernels (or frozen, thawed)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- ½ cup red onion, finely chopped
- ½ cup crumbled queso fresco (or feta)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- ¼ cup mayonnaise
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and let it cool.
- In a large mixing bowl, combine the corn, cherry tomatoes, bell pepper, red onion, and cilantro.
- In a separate bowl, whisk together the lime juice, mayonnaise, chili powder, salt, and pepper.
- Add the cooled pasta to the vegetable mixture, followed by the dressing.
- Gently mix until everything is well coated.
- Fold in the queso fresco just before serving.
Notes
Best enjoyed chilled. Store leftovers in an airtight container for up to three days. Add dressing right before serving for the best flavor.
