A comforting blend of tender chicken, vibrant broccoli, and rich cheddar, this slow-cooked meal is perfect for any occasion.
Ingredients
- 2 pounds of boneless, skinless chicken breasts
- 4 cups of fresh broccoli florets
- 2 cups of grated cheddar cheese
- 1 cup of chicken broth
- 1 cup of heavy cream
- 1 onion, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Optional: Cooked rice or pasta for serving
Instructions
- Place the chicken breasts in the slow cooker. Season with salt and pepper.
- Add the diced onion and minced garlic on top.
- Pour in the chicken broth and heavy cream, covering the chicken fully.
- Secure the lid and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the broccoli and half of the cheddar cheese. Stir gently.
- Once it’s time, melt the remaining cheese on top before serving.
Notes
For added depth of flavor, consider searing the chicken before placing it in the slow cooker. You can substitute frozen broccoli if needed.
