Description

Ingredients

  • 1 lb ground beef
  • 1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 cup spinach, roughly chopped
  • Fresh basil for garnish


Instructions

  1. In a large bowl, mix together ground beef, Parmesan, egg, garlic, oregano, basil, salt, and pepper.
  2. Shape the mixture into meatballs and place them on a baking sheet.
  3. Preheat your skillet over medium heat and add a splash of oil.
  4. Sear the meatballs on all sides until browned, about 8 minutes.
  5. Lower the heat and pour in the heavy cream, stirring gently to combine.
  6. Add in the chopped spinach and let simmer for about 10 minutes until the sauce thickens.

Notes
