Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 can white beans (like cannellini or great northern), drained and rinsed
- 1 can diced green chilies
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup corn (fresh or frozen)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- Salt and pepper, to taste
- Optional toppings: sour cream, cilantro, shredded cheese, jalapeños
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the onion, garlic, cumin, and chili powder.
- Pour in the chicken broth, followed by the white beans, corn, and green chilies.
- Season with salt and pepper to your liking.
- Cover and cook on low for 6 hours or on high for about 3 hours, until the chicken is tender.
- Shred the chicken using two forks and mix everything well before serving.
Notes
Leftovers can be stored in an airtight container for up to 4 days. For extra creaminess, add a splash of heavy cream or cream cheese before serving.
