Description

A comforting and flavorful chicken chili with a creamy texture, perfect for meal prep and cozy gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans (like cannellini or great northern), drained and rinsed
  • 1 can diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • Salt and pepper, to taste
  • Optional toppings: sour cream, cilantro, shredded cheese, jalapeños


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the onion, garlic, cumin, and chili powder.
  3. Pour in the chicken broth, followed by the white beans, corn, and green chilies.
  4. Season with salt and pepper to your liking.
  5. Cover and cook on low for 6 hours or on high for about 3 hours, until the chicken is tender.
  6. Shred the chicken using two forks and mix everything well before serving.

Notes

Leftovers can be stored in an airtight container for up to 4 days. For extra creaminess, add a splash of heavy cream or cream cheese before serving.
