Description

A rich and decadent layered cake combining chocolate and coconut, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 can (12 oz) evaporated milk
  • 1/2 cup butter
  • 1/4 cup sugar


Instructions

  1. Preheat your oven to the appropriate temperature and prepare your cake pans.
  2. In a large bowl, sift together the dry ingredients for the cake.
  3. In another bowl, mix the wet ingredients until fully combined.
  4. Gradually combine the wet and dry components, being careful not to overmix.
  5. Pour the batter evenly into the prepared pans and bake until a toothpick comes out clean.
  6. While the cakes cool, make the frosting by combining the coconut, pecans, evaporated milk, butter, and sugar in a saucepan.
  7. Cook on medium heat until thickened, then allow to cool slightly before adding vanilla.
  8. Assemble by layering the cakes and spreading frosting generously between layers and on top.

Notes

Toast the coconut lightly to enhance its flavor. Store leftovers in an airtight container for up to three days at room temperature.
