Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained
- 1 can corn, drained
- 1 cup chicken broth
- 1 cup cream (or a non-dairy alternative)
- 1 onion, diced
- 2 cloves garlic, minced
- 1-2 diced green chilies (fresh or canned)
- Spices: cumin, paprika, and salt to taste
- Optional toppings: cilantro, lime wedges, or shredded cheese
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and cook for an additional minute, being careful not to let it burn.
- Add shredded chicken, green chilies, and spices to the pot. Stir well to combine.
- Pour in the chicken broth and bring to a simmer. Allow to cook for about 10 minutes.
- Incorporate the beans and corn, simmering for another 10 minutes.
- Finally, mix in the cream and adjust seasoning as needed. Warm through, then serve.
