- 1 tsp Fresh Thyme
- 2 tbsp Fresh Rosemary, chopped
- Salt & Pepper, to taste
- 1 Red Onion, sliced
- 1-2 Honeycrisp Apples, sliced
- 4 tbsp Salted Butter
- 3/4 cup Apple Cider
- 1/2 cup Chicken Broth or White Wine
- 2 tbsp Dijon Mustard
- 3 cloves Garlic, minced

Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken thighs dry and season them with onion powder, garlic powder, smoked paprika, thyme, rosemary, salt, and pepper.
- In a hot, oven-safe skillet, sear the chicken on both sides until golden brown, about 4-5 minutes per side.
- Add the sliced red onion and apples around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Once cooked, remove the chicken and apples from the skillet and set aside.
- On the stovetop, add butter, apple cider, chicken broth (or white wine), Dijon mustard, and minced garlic to the same skillet. Whisk and cook until the sauce starts to thicken, about 3-4 minutes.
- Return the chicken and apples to the skillet, spoon the sauce over them, and serve warm.
Notes
For a different flavor, feel free to substitute Honeycrisp apples with Granny Smith or Braeburn. Fresh herbs enhance the dish’s flavor considerably.
