Description

A comforting breakfast casserole combining crispy tater tots, savory ground beef, and gooey cheddar cheese, perfect for busy mornings or brunch gatherings.


Ingredients

  • 1 package tater tots
  • 1 lb ground beef
  • 6 eggs
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 1 bell pepper, diced (optional)
  • 1 onion, chopped (optional)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, cook the ground beef until fully browned. Drain excess grease and set aside.
  3. In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
  4. Layer half of the tater tots on the bottom of a greased baking dish.
  5. Add the cooked ground beef evenly over the tater tots.
  6. Pour the egg mixture over the beef and tater tots.
  7. Top with the remaining tater tots and sprinkle shredded cheese on top.
  8. Bake for 30-35 minutes, or until the casserole is set and golden brown on top.
  9. Let it cool slightly before serving.

Notes

For best texture, ensure the ground beef is cooked thoroughly before adding to the casserole. Let the casserole rest a few minutes after baking for easier slicing.
