Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add minced garlic and sauté for another minute until fragrant.
- Transfer the onions and garlic into the slow cooker.
- Place the chicken breasts on top of the onion-garlic mixture.
- Pour chicken broth over the chicken.
- Sprinkle thyme, paprika, salt, and pepper on top.
- Cover and cook on low for 6 hours or until the chicken is tender.
- Shred the chicken before serving and stir it back into the sauce.
Notes
For richer flavor, substitute chicken thighs or use vegetable broth for a lighter option. Add a splash of balsamic vinegar for extra brightness.
