Description

Delicious and vibrant stuffed zucchini boats filled with ground beef and topped with cheese, perfect for a healthy meal any day of the week.


Ingredients

  • 4 medium zucchinis
  • 1 lb ground beef (or turkey or a plant-based alternative)
  • 1 cup diced tomatoes (canned)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the seeds.
  3. In a skillet, heat olive oil over medium heat, add chopped onion and garlic, and cook until softened (3-4 minutes).
  4. Add ground beef and cook until browned, draining excess fat.
  5. Stir in diced tomatoes, Italian seasoning, salt, and pepper; cook until heated through.
  6. Fill each zucchini boat with the beef mixture and top with shredded cheese.
  7. Place stuffed zucchinis in a baking dish, cover with aluminum foil.
  8. Bake for 25-30 minutes until zucchinis are tender.
  9. Remove foil and bake for an additional 5-10 minutes until cheese is golden and bubbly.
  10. Allow to cool slightly before serving warm.
