Ingredients
- 4 medium zucchinis
- 1 lb ground beef (or turkey or a plant-based alternative)
- 1 cup diced tomatoes (canned)
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the seeds.
- In a skillet, heat olive oil over medium heat, add chopped onion and garlic, and cook until softened (3-4 minutes).
- Add ground beef and cook until browned, draining excess fat.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper; cook until heated through.
- Fill each zucchini boat with the beef mixture and top with shredded cheese.
- Place stuffed zucchinis in a baking dish, cover with aluminum foil.
- Bake for 25-30 minutes until zucchinis are tender.
- Remove foil and bake for an additional 5-10 minutes until cheese is golden and bubbly.
- Allow to cool slightly before serving warm.
