Description

This comforting vegetable casserole combines flaky biscuits with a hearty vegetable filling, perfect for chilly nights.


Ingredients

  • 2 cups mixed vegetables (carrots, peas, corn, bell peppers)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 cup milk (or a dairy-free alternative)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can refrigerated biscuits
  • Olive oil for sautéing


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until soft.
  3. Add mixed vegetables and cook for a few minutes.
  4. Stir in flour and cook for an additional minute, then gradually add the vegetable broth and milk, stirring constantly.
  5. Season with thyme, salt, and pepper; bring to a simmer until thickened.
  6. Transfer the vegetable mixture to a greased baking dish.
  7. Top with the biscuits, placing them evenly over the filling.
  8. Bake for 20–25 minutes or until the biscuits are golden brown.

Notes
