This comforting vegetable casserole combines flaky biscuits with a hearty vegetable filling, perfect for chilly nights.
Ingredients
- 2 cups mixed vegetables (carrots, peas, corn, bell peppers)
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups vegetable broth
- 1 cup milk (or a dairy-free alternative)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 can refrigerated biscuits
- Olive oil for sautéing
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until soft.
- Add mixed vegetables and cook for a few minutes.
- Stir in flour and cook for an additional minute, then gradually add the vegetable broth and milk, stirring constantly.
- Season with thyme, salt, and pepper; bring to a simmer until thickened.
- Transfer the vegetable mixture to a greased baking dish.
- Top with the biscuits, placing them evenly over the filling.
- Bake for 20–25 minutes or until the biscuits are golden brown.
