Description
Satisfying and flavorful chicken pitas filled with juicy chicken, wrapped in soft pitas and drizzled with herby ranch dressing.
Ingredients
- 2 Chicken breasts or thighs
- 2 tbsp Olive oil
- 1 tsp Paprika
- 1 tsp Garlic powder
- 1 tsp Onion powder
- Salt and pepper to taste
- Fresh herbs (like parsley and dill), chopped
- ½ cup Sour cream or Greek yogurt
- ½ cup Buttermilk (or milk mixed with vinegar)
- Pita bread
- Optional: Lettuce, tomatoes, or cucumbers for topping
Instructions
- Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper for easy cleanup.
- Combine chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper in a bowl. Massage the spices into the chicken to ensure every part is coated.
- Spread the seasoned chicken evenly on the prepared sheet pan.
- Roast the chicken for about 25 minutes or until it reaches an internal temperature of 165°F (75°C). Let it rest for a few minutes before slicing.
- Mix the sour cream, buttermilk, and your chopped fresh herbs in a separate bowl. Adjust seasoning to taste.
- Slice the warm pitas and stuff with sliced chicken and desired toppings. Drizzle with the herby ranch dressing.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Chicken can be frozen for up to 2 months.
