Description

A heartwarming Sicilian meatloaf featuring layers of flavorful meat, savory filling of eggs, cheese, and ham.


Ingredients

  • 2 lbs ground beef
  • ½ lb ground veal
  • 1 cup breadcrumbs (fresh or Panko)
  • 1 cup grated Parmesan cheese
  • ½ cup whole milk
  • 1 medium onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 4 large hard-boiled eggs, sliced
  • 4 oz thinly sliced provolone cheese
  • 4 oz thinly sliced cooked ham
  • 1 cup tomato sauce (optional)
  • 1 tablespoon olive oil
  • 1 clove garlic, minced (optional)
  • ½ teaspoon dried oregano (optional)
  • ¼ cup water (if thinning sauce)


Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté the onion, bell pepper, and celery until soft, about 5-7 minutes. Add minced garlic and red pepper flakes, cook for 1 more minute. Cool completely.
  2. In a medium bowl, combine breadcrumbs with the ½ cup of whole milk and let sit.
  3. In a large bowl, mix ground beef, ground veal, cooled aromatics, hydrated breadcrumbs, Parmesan cheese, parsley, basil, eggs, salt, and pepper gently.
  4. Slice hard-boiled eggs, provolone cheese, and cooked ham.
  5. On parchment paper, spread ⅔ of the meat mixture into a rectangle. Layer with sliced eggs, provolone, and ham, leaving a 1-inch border. Top with remaining meat mixture and roll tightly into a log.
  6. Preheat oven to 375°F (190°C). Bake meatloaf for 30 minutes.
  7. Meanwhile, prepare optional sauce: heat 1 tablespoon olive oil, sauté minced garlic for 30 seconds, add tomato sauce, water, oregano, salt, and pepper. Simmer for 10-15 minutes.
  8. Spoon about half of the sauce over meatloaf after 30 minutes, return to oven and bake an additional 45-60 minutes until 160°F (71°C).
  9. Let meatloaf rest for 10-15 minutes before slicing and serving with remaining sauce.

Notes

Don’t overmix the meat mixture. Cooler aromatics prevent cooking the eggs. Always check with a meat thermometer for doneness.
