Ingredients
- 1 cup black-eyed peas (dried or canned; if dried, soak overnight)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (chopped)
- 2 cups vegetable broth or water
- 1 teaspoon cumin
- 1 bay leaf
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Prep the Black-Eyed Peas: If you’re using dried black-eyed peas, soak them in water overnight and then drain. For canned, simply rinse and drain them.
- Sauté the Vegetables: In the Instant Pot, heat a splash of oil, then sauté the chopped onion, minced garlic, and bell pepper until fragrant and softened.
- Combine Ingredients: Add the black-eyed peas, vegetable broth (or water), cumin, and bay leaf to the pot. Stir to combine.
- Cook: Seal the Instant Pot and set to cook on high pressure for 10-12 minutes. If cooking on the stovetop, bring to a simmer and cook on low for about 30-40 minutes, or until peas are tender.
- Season and Serve: Once cooked, season with salt and pepper to taste. Remove the bay leaf and top with fresh herbs before serving.

Serve over rice or quinoa, pair with cornbread, or add a dollop of vegan sour cream for a creamy contrast.
