Ingredients
- 8 oz thick-cut bacon, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups frozen black-eyed peas
- 4 cups chicken or vegetable broth
- Salt, to taste
- Pepper, to taste
- 2 cups collard greens, chopped
Instructions
- Cook the chopped bacon in a skillet until crispy and golden. Remove bacon and set aside, keeping the drippings in the skillet.
- Add chopped onion and minced garlic to the skillet, sauté until softened.
- Stir in frozen black-eyed peas and broth, season with salt and pepper.
- Add collard greens and let them simmer until wilted and peas are tender, about 30 minutes.
- Serve warm, topped with the crumbled bacon.
Notes
