Description

A warm and satisfying dish featuring tender frozen black-eyed peas, crispy bacon, and flavorful greens, perfect for any weeknight dinner or festive gathering.


Ingredients

  • 8 oz thick-cut bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups frozen black-eyed peas
  • 4 cups chicken or vegetable broth
  • Salt, to taste
  • Pepper, to taste
  • 2 cups collard greens, chopped


Instructions

  1. Cook the chopped bacon in a skillet until crispy and golden. Remove bacon and set aside, keeping the drippings in the skillet.
  2. Add chopped onion and minced garlic to the skillet, sauté until softened.
  3. Stir in frozen black-eyed peas and broth, season with salt and pepper.
  4. Add collard greens and let them simmer until wilted and peas are tender, about 30 minutes.
  5. Serve warm, topped with the crumbled bacon.

Notes

For added flavor, consider adding smoked paprika or sautéed bell peppers. Can substitute collard greens with kale or spinach. Adjust cooking time for fresh black-eyed peas.
