Description

A comforting bowl of savory ramen made in a slow cooker, perfect for cozy nights or impressing friends.


Ingredients

  • 1 lb beef (chuck or brisket)
  • 4 cups beef broth
  • 3 cups water
  • 2 packs of ramen noodles (discard the seasoning packets)
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • ½ cup soy sauce
  • 2 teaspoons minced garlic
  • 1 tablespoon ginger, grated
  • 2 green onions, sliced (for garnish)


Instructions

  1. Cut the beef into large chunks and season with salt and pepper.
  2. Place the beef in the slow cooker, add the garlic, ginger, soy sauce, beef broth, and water.
  3. Once the broth is simmering, toss in the mushrooms and bok choy.
  4. Set the slow cooker to low and let it cook for 6-8 hours or on high for about 4 hours until the beef is tender.
  5. In the last 30 minutes, add the ramen noodles to the pot, ensuring they’re submerged in the broth.
  6. Once ready, ladle the contents into bowls, garnish with green onions, and enjoy.

Notes

For added flavor, consider searing the beef before adding it to the slow cooker. A soft-boiled egg and a drizzle of sesame oil can elevate the dish.
