Ingredients
- 1 lb beef (chuck or brisket)
- 4 cups beef broth
- 3 cups water
- 2 packs of ramen noodles (discard the seasoning packets)
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- ½ cup soy sauce
- 2 teaspoons minced garlic
- 1 tablespoon ginger, grated
- 2 green onions, sliced (for garnish)
Instructions
- Cut the beef into large chunks and season with salt and pepper.
- Place the beef in the slow cooker, add the garlic, ginger, soy sauce, beef broth, and water.
- Once the broth is simmering, toss in the mushrooms and bok choy.
- Set the slow cooker to low and let it cook for 6-8 hours or on high for about 4 hours until the beef is tender.
- In the last 30 minutes, add the ramen noodles to the pot, ensuring they’re submerged in the broth.
- Once ready, ladle the contents into bowls, garnish with green onions, and enjoy.
Notes
For added flavor, consider searing the beef before adding it to the slow cooker. A soft-boiled egg and a drizzle of sesame oil can elevate the dish.
