Ingredients
- 2 to 3 pounds of boneless, skinless chicken thighs or breasts
- 1 cup of brown sugar
- ½ cup of soy sauce
- 4 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 tablespoon of cornstarch (optional, for thickening later)
- Salt and pepper (to taste)
Instructions
- Place the chicken thighs or breasts in the slow cooker.
- In a bowl, whisk together brown sugar, soy sauce, minced garlic, ground ginger, salt, and pepper.
- Drizzle the sauce over the chicken in the slow cooker, ensuring it’s well-coated.
- Cover and cook on low for 6 hours or until the chicken is tender and easily shredded.
- If desired, remove the chicken and stir in cornstarch mixed with a bit of water. Cook on high for an additional 15-30 minutes until thickened before serving.
Notes
Marinate the chicken overnight for deeper flavor. Consider adding red pepper flakes for heat or substituting honey for a different sweetness profile.
