Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 2 cups baby potatoes or diced potatoes
- 8 oz cream cheese
- 1 cup shredded cheese (cheddar)
- 2 tablespoons ranch seasoning mix
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken with salt, pepper, and ranch seasoning.
- Place the seasoned chicken at the bottom of the slow cooker, then add the chopped potatoes.
- Mix the cream cheese and chicken broth in a bowl until smooth, then pour over the chicken and potatoes.
- Sprinkle additional ranch seasoning and shredded cheese on top.
- Cover and cook on low for 240-360 minutes until the chicken is tender and cooked through.
- Serve hot, garnished with fresh parsley.
Notes
For a lighter version, consider using reduced-fat cream cheese. You can also add sautéed onions, garlic, or other vegetables for extra flavor.
