Description

Warm, hearty, and endlessly comforting, this dish combines tender chicken, creamy cheese, and satisfying potatoes, all cooked in one pot.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 cups baby potatoes or diced potatoes
  • 8 oz cream cheese
  • 1 cup shredded cheese (cheddar)
  • 2 tablespoons ranch seasoning mix
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Season the chicken with salt, pepper, and ranch seasoning.
  2. Place the seasoned chicken at the bottom of the slow cooker, then add the chopped potatoes.
  3. Mix the cream cheese and chicken broth in a bowl until smooth, then pour over the chicken and potatoes.
  4. Sprinkle additional ranch seasoning and shredded cheese on top.
  5. Cover and cook on low for 240-360 minutes until the chicken is tender and cooked through.
  6. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, consider using reduced-fat cream cheese. You can also add sautéed onions, garlic, or other vegetables for extra flavor.
