Description

Transform simple ingredients into comforting chicken tacos with a slow cooker, perfect for busy nights.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup chicken broth
  • 1 can diced tomatoes (with green chilies)
  • 1 onion, diced
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Tortillas (corn or flour)
  • Toppings: shredded cheese, lettuce, diced tomatoes, avocado, lime wedges, sour cream, hot sauce


Instructions

  1. Place the boneless chicken breasts in the slow cooker.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Pour the chicken broth and diced tomatoes over the seasoned chicken.
  4. Add diced onion and minced garlic, then season with salt and pepper to taste.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  6. Once cooked, shred the chicken inside the slow cooker using two forks.
  7. Stir to mix the shredded chicken with the broth and spices.
  8. Serve warm in tortillas with your choice of toppings.

Notes

For added flavor, marinate the chicken in seasoning and broth for a few hours before cooking. Use low-sodium broth for a healthier option.
