Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 packet taco seasoning (or homemade blend)
- 1 cup chicken broth
- 1 can diced tomatoes (with green chilies)
- 1 onion, diced
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Tortillas (corn or flour)
- Toppings: shredded cheese, lettuce, diced tomatoes, avocado, lime wedges, sour cream, hot sauce
Instructions
- Place the boneless chicken breasts in the slow cooker.
- Sprinkle the taco seasoning evenly over the chicken.
- Pour the chicken broth and diced tomatoes over the seasoned chicken.
- Add diced onion and minced garlic, then season with salt and pepper to taste.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Once cooked, shred the chicken inside the slow cooker using two forks.
- Stir to mix the shredded chicken with the broth and spices.
- Serve warm in tortillas with your choice of toppings.
Notes
For added flavor, marinate the chicken in seasoning and broth for a few hours before cooking. Use low-sodium broth for a healthier option.
