Ingredients
- 1 lb ground beef
- 4 medium potatoes, diced
- 1 can (15 oz) beans (like kidney or black beans), drained and rinsed
- 1 cup onion, chopped
- 2 cups shredded cheese (cheddar or your choice)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, brown the ground beef along with the chopped onion until fully cooked. Drain any excess fat.
- In your slow cooker, layer half of the diced potatoes.
- Add the browned beef mixture, followed by the beans, undrained diced tomatoes, and a generous sprinkle of shredded cheese.
- Layer the remaining potatoes on top, pour in the beef broth, and season with Italian herbs, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender and everything is heated through.
- Serve warm, topped with extra cheese or freshly chopped herbs.
