Description

A comforting and versatile casserole made in a slow cooker, perfect for any occasion and budget-friendly.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 can (15 oz) beans (like kidney or black beans), drained and rinsed
  • 1 cup onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. In a skillet over medium heat, brown the ground beef along with the chopped onion until fully cooked. Drain any excess fat.
  2. In your slow cooker, layer half of the diced potatoes.
  3. Add the browned beef mixture, followed by the beans, undrained diced tomatoes, and a generous sprinkle of shredded cheese.
  4. Layer the remaining potatoes on top, pour in the beef broth, and season with Italian herbs, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender and everything is heated through.
  6. Serve warm, topped with extra cheese or freshly chopped herbs.
