A hearty casserole that combines ground beef, beans, and potatoes, perfect for a cozy meal.
Ingredients
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 2 cups diced potatoes (fresh or frozen)
- 1 cup shredded cheese (cheddar or your preference)
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- Salt and pepper to taste
Instructions
- Brown the beef: In a skillet, cook the ground beef along with the diced onion and minced garlic until the meat is browned. Drain the excess fat.
- Combine ingredients: In your slow cooker, mix the browned beef, black beans, diced potatoes, diced tomatoes, chili powder, salt, and pepper.
- Stir well: Make sure everything is evenly combined for the best flavor.
- Set to cook: Cover the slow cooker and either cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- Add cheese: In the last 30 minutes of cooking, sprinkle the shredded cheese on top. Cover and let it melt beautifully.
- Serve and enjoy: Ladle into bowls and dig in while it’s hot!
Notes
For added flavor, garnish with fresh cilantro or green onions. Serve with a dollop of sour cream.
