Description

A hearty casserole that combines ground beef, beans, and potatoes, perfect for a cozy meal.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups diced potatoes (fresh or frozen)
  • 1 cup shredded cheese (cheddar or your preference)
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • Salt and pepper to taste


Instructions

  1. Brown the beef: In a skillet, cook the ground beef along with the diced onion and minced garlic until the meat is browned. Drain the excess fat.
  2. Combine ingredients: In your slow cooker, mix the browned beef, black beans, diced potatoes, diced tomatoes, chili powder, salt, and pepper.
  3. Stir well: Make sure everything is evenly combined for the best flavor.
  4. Set to cook: Cover the slow cooker and either cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  5. Add cheese: In the last 30 minutes of cooking, sprinkle the shredded cheese on top. Cover and let it melt beautifully.
  6. Serve and enjoy: Ladle into bowls and dig in while it’s hot!

Notes

For added flavor, garnish with fresh cilantro or green onions. Serve with a dollop of sour cream.
