Description

A comforting and creamy slow cooker potato soup that’s perfect for chilly evenings and gatherings.


Ingredients

  • 4 large potatoes, diced
  • 1 cup bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Chives for garnish (optional)


Instructions

  1. In a slow cooker, combine the diced potatoes, crumbled bacon, cheddar cheese, sour cream, chopped onion, minced garlic, and chicken broth.
  2. Season everything with salt and pepper to taste.
  3. Cover and cook on low for about 4 hours, or until the potatoes are tender.
  4. If you prefer a smoother soup, use an immersion blender to blend the mixture to your desired consistency.
  5. Serve the soup hot, garnished with chives, extra bacon, or a sprinkle of cheese if you like.

Notes

For a lighter version, consider using Greek yogurt instead of sour cream or swapping regular bacon for turkey bacon. Store leftovers in the refrigerator for up to three days or freeze for up to three months.
