Description

A comforting slow cooker dish featuring tender chicken cooked with tomatoes, basil, and creamy sauce, perfect for any gathering.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup fresh basil, chopped (or 1 tablespoon dried basil)
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving, optional)


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a mixing bowl, combine diced tomatoes, chicken broth, heavy cream, garlic powder, Italian seasoning, salt, and pepper. Pour the mixture over the chicken.
  3. Cook on low for 4-6 hours or until the chicken is tender and cooked through.
  4. In the last 30 minutes of cooking, stir in fresh basil for an aromatic finish.
  5. Once done, shred the chicken using two forks and mix it back into the sauce before serving.

Notes

For a richer flavor, sear the chicken briefly before adding it to the slow cooker. Leftovers can be stored in an airtight container for up to three days, or frozen for three months.
