Description

A savory slow-cooked chicken dish infused with tangy tomatoes and fragrant basil, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup heavy cream (or a non-dairy substitute)
  • 1 cup chicken broth
  • ¼ cup fresh basil, chopped (or 1 tablespoon dried basil)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Grated parmesan cheese for serving (optional)


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. In a bowl, combine the diced tomatoes, heavy cream, chicken broth, basil, garlic powder, salt, and pepper. Stir until well mixed.
  3. Pour the tomato mixture over the chicken in the slow cooker.
  4. Cover and cook on low for about 6 hours or until the chicken is tender and fully cooked.
  5. Once cooked, shred the chicken using two forks, mixing it back into the sauce.
  6. Serve hot, garnished with parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze portions for up to 3 months.
