Ingredients
- 4 boneless, skinless chicken breasts
- 1 can diced tomatoes (14.5 ounces)
- 1 cup heavy cream (or a non-dairy substitute)
- 1 cup chicken broth
- ¼ cup fresh basil, chopped (or 1 tablespoon dried basil)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Grated parmesan cheese for serving (optional)
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- In a bowl, combine the diced tomatoes, heavy cream, chicken broth, basil, garlic powder, salt, and pepper. Stir until well mixed.
- Pour the tomato mixture over the chicken in the slow cooker.
- Cover and cook on low for about 6 hours or until the chicken is tender and fully cooked.
- Once cooked, shred the chicken using two forks, mixing it back into the sauce.
- Serve hot, garnished with parmesan cheese if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze portions for up to 3 months.
