Description

A comforting slow cooker dish featuring tender chicken, zesty sun-dried tomatoes, fresh spinach, and creamy orzo.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup heavy cream (or milk for a lighter option)
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil or parsley, for garnish


Instructions

  1. Sear the chicken: In a skillet, heat a little oil over medium-high heat. Season the chicken with salt and pepper and sear it for about 4-5 minutes on each side until golden brown.
  2. Combine ingredients: Transfer the chicken to the slow cooker. Add the chicken broth, sun-dried tomatoes, garlic, and Italian seasoning on top.
  3. Cook: Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
  4. Stir in cream and orzo: About 30 minutes before serving, stir the orzo into the slow cooker along with the heavy cream. Continue to cook until the orzo is al dente.
  5. Add spinach: Stir in the fresh spinach just before serving, allowing it to wilt in the residual heat.
  6. Serve: Taste and adjust seasoning if needed, then serve with grated Parmesan cheese and fresh herbs for garnish.
