Ingredients
- 2 lbs beef chuck roast, cut into large chunks
- 6 cloves fresh garlic, minced
- ½ cup unsalted butter, cut into pieces
- 1 tsp dried thyme
- 1 cup low-sodium beef broth
- ¼ cup low-sodium soy sauce
- 1 tsp black pepper
- 1 medium onion, chopped
- 2 carrots (optional), sliced
- Salt to taste
Instructions
- Trim excess fat from the beef chuck roast and cut it into large chunks.
- Heat a skillet over medium-high heat and sear the beef chunks until browned on all sides.
- In your slow cooker, layer the chopped onions and minced garlic. Place the seared beef on top.
- Lay the butter pieces evenly over the beef.
- Pour the beef broth and soy sauce over the mixture. Sprinkle with thyme, black pepper, and salt to taste.
- Set your slow cooker to low for 8 hours or high for 4 hours, until the beef is fork-tender.
- Before serving, shred or cube the beef in its sauce.
Notes
For richer flavor, consider adding Worcestershire sauce and searing the meat enhances flavor depth.
