Description

A comforting dish that turns a simple cut of beef into a tender masterpiece, perfect for family dinners or entertaining guests.


Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 6 cloves fresh garlic, minced
  • ½ cup unsalted butter, cut into pieces
  • 1 tsp dried thyme
  • 1 cup low-sodium beef broth
  • ¼ cup low-sodium soy sauce
  • 1 tsp black pepper
  • 1 medium onion, chopped
  • 2 carrots (optional), sliced
  • Salt to taste


Instructions

  1. Trim excess fat from the beef chuck roast and cut it into large chunks.
  2. Heat a skillet over medium-high heat and sear the beef chunks until browned on all sides.
  3. In your slow cooker, layer the chopped onions and minced garlic. Place the seared beef on top.
  4. Lay the butter pieces evenly over the beef.
  5. Pour the beef broth and soy sauce over the mixture. Sprinkle with thyme, black pepper, and salt to taste.
  6. Set your slow cooker to low for 8 hours or high for 4 hours, until the beef is fork-tender.
  7. Before serving, shred or cube the beef in its sauce.

Notes

For richer flavor, consider adding Worcestershire sauce and searing the meat enhances flavor depth.
