Description

A warm, hearty dish of tender beef simmered in a rich garlic and buttery sauce, perfect for busy weeknights or special gatherings.


Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 6 cloves fresh garlic, minced
  • 1/2 cup unsalted butter, cut into pieces
  • 1 tsp dried thyme
  • 1 cup low-sodium beef broth
  • 1/4 cup low-sodium soy sauce
  • 1 tsp black pepper
  • 1 medium onion, chopped
  • 2 carrots (optional), sliced
  • Salt to taste


Instructions

  1. Trim excess fat from the beef chuck roast and cut it into large chunks.
  2. In a skillet over medium-high heat, heat some oil and sear the beef chunks on all sides until browned.
  3. Transfer the chopped onions and minced garlic to your slow cooker, followed by the seared beef on top.
  4. Distribute the butter pieces evenly over the meat.
  5. Pour the beef broth and soy sauce over the beef, then sprinkle with dried thyme, black pepper, and salt to taste.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
  7. Before serving, shred or cube the beef in its sauce and mix well.

Notes

Serve over mashed potatoes, rice, or steamed vegetables. Freezes well for up to three months.
