A warm, hearty dish of tender beef simmered in a rich garlic and buttery sauce, perfect for busy weeknights or special gatherings.
Ingredients
- 2 lbs beef chuck roast, cut into large chunks
- 6 cloves fresh garlic, minced
- 1/2 cup unsalted butter, cut into pieces
- 1 tsp dried thyme
- 1 cup low-sodium beef broth
- 1/4 cup low-sodium soy sauce
- 1 tsp black pepper
- 1 medium onion, chopped
- 2 carrots (optional), sliced
- Salt to taste
Instructions
- Trim excess fat from the beef chuck roast and cut it into large chunks.
- In a skillet over medium-high heat, heat some oil and sear the beef chunks on all sides until browned.
- Transfer the chopped onions and minced garlic to your slow cooker, followed by the seared beef on top.
- Distribute the butter pieces evenly over the meat.
- Pour the beef broth and soy sauce over the beef, then sprinkle with dried thyme, black pepper, and salt to taste.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
- Before serving, shred or cube the beef in its sauce and mix well.
Notes
Serve over mashed potatoes, rice, or steamed vegetables. Freezes well for up to three months.
