Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/2 cup kalamata olives, pitted and halved
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Juice and zest of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the chicken: Season the chicken breasts with salt, pepper, oregano, and basil on both sides.
- Layer the slow cooker: Place the seasoned chicken at the bottom of the slow cooker. Add the sliced red onion, cherry tomatoes, and kalamata olives over the top.
- Mix the sauce: In a small bowl, combine the chicken broth, minced garlic, lemon juice, and lemon zest. Pour this mixture evenly over the chicken and vegetables.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and cooked through.
- Finish and serve: Remove the chicken from the slow cooker, and garnish with fresh parsley before serving.
Notes
Feel free to customize with different proteins or vegetables. Searing the chicken beforehand adds extra flavor.
